Bacon & Apple Muffins

Bacon is one of my go to breakfast proteins. It’s easy to make and keeps me full so I figured why not make a muffin with bacon and add apples to it for fall?

These are absolutely delicious and easy to take on the go.

Ingredients:

(Makes 8-10 muffins)

  • 1 banana

  • 1 egg (may sub gelatin egg)

  • 1 + 1/4 cup almond flour (sub Tigernut flour)

  • 1/2 cup tapioca starch (sub arrowroot)

  • 2 tbsp coconut flour

  • 1 tsp baking powder

  • Cinnamon to taste

  • Pinch salt

  • 3/4 cup full fat coconut milk

  • 1 small or medium apple, diced

  • .5 lb Canadian bacon, diced (sub American)

  • Avocado or coconut oil for coating pan

Preparations:

  • Mash the banana in a large bowl. Then add in the egg and beat together.

  • Add in the flours, cinnamon, baking soda and salt.

  • Mix together well. Set aside.

  • Dice the apple into small pieces. Chop the bacon into small pieces. Then, fold them into the batter.

  • Coat a baking tray with avocado oil and line it with muffin tins

  • Transfer the batter into it and bake. Start the oven at 425F for about 8-10 minutes. Once the muffins begin to puff up, turn the heat down to 350F and bake for another 20 minutes until they are golden brown and a toothpick comes out clean.

  • Cool before consumption.
