Chunky Apple Oladi (Pancakes)

The Russian word for pancakes is Oladi and I think because my family immigrated here from Ukraine during the Soviet era, whenever I think of any kind of apple pancakes they immediately become Oladi to me or Oladushky to me.

This recipe is sooo delicious. The pancakes are thick and fluffy, grain free, sugar free, dairy free and paleo. If you try it please let me know how they turned out and how you like them. I always love seeing what you’re making!

Ingredients:

  • 316g apples or two medium apples (I used Lady Crisp)

  • 2 eggs

  • 103g or 1/2 cup apple sauce

  • 3/4 cup full fat coconut milk (I like Nature’s Greatest Foods or Native Forest

  • cinnamon, to taste

  • pinch of salt

  • dash of vanilla extract

  • 3/4 cup cassava flour (I use Otto’s Naturals)

  • 1/4 cup tapioca starch (sub arrowroot starch)

  • 1/4 cup almond flour (sifted)

  • 1 tsp grain free baking powder (I use Otto’s Naturals) (Baking soda should also work, but I have not

  • 2 tbsp avocado oil, to cook

Preparations:

  • Peel the apples and dice them into small cubes. Set aside

  • Next, crack two eggs into a bowl. Add in the apple sauce, coconut milk, cinnamon, salt and vanilla. Mix well with a fork or whisk.

  • Then, add the in the cassava flour, tapioca starch, almond flour and baking powder. Stir well to combine. Gently stir in the diced apples and fold them in with a spatula or spoon.

  • Oil a cast iron skillet with avocado oil and let it heat up on medium low heat. Once it’s hot enough, spoon in some of the pancake batter. Cook them low and slow on each side for about 5 minutes or until nicely browned. Keep an eye on the skillet as you cook, making sure not to burn them.

  • Remove from skillet and serve with coconut yogurt, eggs, bacon or any other breakfast foods you desire.
