Date, Fig & Sesame Bars

These bars are full of healthy fats, calcium rich figs and sesame seeds. Best of all, they do not require any baking and take just a few minutes to whip up! These are paleo, grain free, contain no added sugars and are just so delicious!

Ingredients:

(Makes 16 slices)

Base:

  • 4 tbsp sesame seeds

  • 340g dates, pits removed

  • 5 oz or 140g dried figs

  • 28g or 2 tbsp tahini

  • 1 tbsp coconut flour

  • 1 tbsp tigernut flour (or more coconut flour)

  • 60g pecans

Ganache:

  • 6 oz dark chocolate bar

  • 2-3 tbsp of coconut milk

  • 1-2 tbsp honey (optional)

Toppings:

  • handful of sesame seeds, for topping

  • handful of crushed dried rose petals

Jam:

  • 6 oz frozen blueberries

  • 8 oz frozen raspberries

  • 4 tbsp dried rose hips

  • 2 tsp tapioca starch

Preparations:

  • Add all of the base ingredients to a food processor and blend until everything is well combined and sticks together to form a sort of dough.

  • Line a brownie tray with parchment paper and press the dough into it, evenly spreading it out to reach all sides evenly. Place in the fridge to cool for 10 minutes while you make the ganache and jam.

  • I would advise making the jam at least a day ahead of time so that it has time to cool in the fridge. This recipe makes a lot of leftover jam that you may use as you please. Add the berries to a small pot and allow them to break down and simmer until they do. Then, add in the tapioca starch and rose hips. Stir together well. Turn off the stove and set aside to cool. Once it’s cooled place in the fridge.

  • Take your chocolate and heat it over a stove or a microwave for a few minutes. I use a stove. Once the chocolate is almost fully melted, add in the coconut milk and continue to stir. Once the mixture is at your desired consistency, you may stir in some honey, if desired.

  • Remove from the heat.

  • Remove your frozen bar base from the freezer. Then, pour the ganache over it, spreading it out all over the bar with the back of a spoon. Sprinkle with as many sesame seeds as you desire.

  • Next, remove the jam from the fridge and add a couple of spoonfuls on top of the ganache and swirl it around if you wish.

  • Top with more sesame seeds and a handful of crushed rose petals (or another edible flower or your choice)

  • Move to the fridge to set for about an hour or so. Once the bars have set, remove them from the fridge and cut into equal squares. I was able to get 16 pieces from these.

  • They are pretty calorie dense so I just eat them little by little whenever I need a little boost or quick pick me up.
