Egg Free Vegetable Pancakes

Who’s got time or money to be making pancakes with eggs right now not me, that’s for sure in this economy with egg prices soaring to over $12 for a regular non-organic not special carton of eggs is insane.

Prices are only getting higher, so I’ve been on a mission to use eggs, less and more egg alternatives

To bind these delicious vegetable pancakes I used a chia egg. She seeds are incredibly high in nutrients and are loaded with fiber. Over the course of the last month or so, I have increased my fiber intake and one Of the ways I do that is to consume chia seeds almost daily.

Chia seeds are full of anti-inflammatory nutrients that help heal the gut as well as Omega-3 which are essential in healing a leaky gut. If you have an autoimmune condition you may know that a leaky gut is a precursor to all autoimmune disease. So healing your leaky gut with more Omega-3 foods daily, would also help heal your autoimmune condition.

Ingredients:

  • 2 medium to large carrots

  • 2 taro root bulbs (also known as eddo)

  • 1/2 large onion

  • 1/2 cup cassava flour

  • 1/2 tbsp green banana flour

  • 2 tbsp tapioca starch

  • 1/2 tsp salt

  • 1 tsp garlic powder

  • Dash sage powder

  • 1 tbsp chia seeds

  • 2.5 tbsp water

  • 1 tbsp avocado oil, for cooking

  • Coconut aminos, to serve

Preparations:

  • Start by making your chia egg. Place 1 tablespoon of chia seeds in a small bowl & add in 2.5 tbsp water. Stir together and set aside.

  • Next, julienne all of your vegetables and place them into a large bowl. Add in the flours, tapioca starch and herbs and mix together.

  • Then, mix in the chia seed mixture and combine everything using your hands.

  • He does skillet with 1 tablespoon avocado oil. Once it’s heated, add a splash of water to the pan. Then add a handful of batter.

  • Spread the batter out evenly on the skillet and cook on each side for 3 to 5 minutes.

  • Repeat this with the remaining batter.

  • Serve with coconut aminos.
