Single Serving Low Carb Peach Galette
Galettes are one of my favorite things to make year round. This recipe in particular is so delicious. It’s free of eggs, sweetened with bananas and the base is made with almond flour, giving it a rich, nutty flavor.
Even Marina, one of the cats I’m currently house sitting for liked it!
Ingredients:
1/3 cup almond flour
1 tbsp tapioca starch (sub arrowroot, potato or corn starch, if tolerated)
Pinch of salt
1 tbsp coconut oil
1/4 small, ripe banana
1/2 tbsp cold water
1 peach, thinly sliced
1/4 tsp cinnamon
1/4 tsp vanilla
Preparations:
Add the almond flour and tapioca starch to a bowl with a pinch of salt Mix them together with your hands.
Mash the banana in a small dish. Then, add it to the flour mix along with the coconut oil and water.
Mix everything together until a dough forms.
Cover the dough with plastic wrap or a towel and let sit in the fridge for 10-15 minutes.
Thinly slice the peach. Add it to a small dish and mix in vanilla and cinnamon.
Once the dough is chilled, remove it from the freezer and roll it out into a circle.
Turn your on to oven to 350F
Add the peach slices to the center and fold in the sides of the galette to cover them.
Lightly oil a baking pan with coconut oil. Then place the galette on it.
Bake for 20-25 minutes. Then remove it from the oven, let it cool a bit and then dig in!
