Taro Root & Thyme Wedges
Taro is my go to replacement for potatoes. I’ve made these wedges from them, I’ve made latkes, I use them in soups, stir fries. You’ll find taro in most asian markets and grocery stores. They look like small little balls of fur and taste similar to a potato. I decided to add some thyme to these babies for some added flavor and an extra nutrient boost.
Ingredients:
6-8 taro (aka: eddo)
2 tbsp avocado oil
a few sprigs fresh thyme
salt, to taste
garlic powder, to taste
To make:
If this is your first time using taro, you’ll want to look out for a small round hairy ball when you go to the grocery store. You can find taro at almost any east asian market - Korean, Japanese, Indian, etc. Its furry on the outside and slick and a little sticky inside.
Peel your taro first.. You may want to use gloves while doing this so you don’t stain your hands. When touching the inner flesh of the taro which feels similar to the inside of yucca, its common to have your hands covered in spots. This happens to everyone and there’s no need to worry if it happens to you. This can be avoided by wearing gloves, if you wish. If you don’t wear gloves the red marks will go away.
Once your taro is peeled, chop each piece into quarters or 8ths. Transfer to a large bowl and mix in the other ingredients. Bake in the oven for 30-40 minutes @ 400F.
If you want an extra bit of crunch, finish them off in a the cast iron skillet for an extra crunch. Oil your some oil and fry for 5-10 more minutes.
These will store in the fridge for up to 5 days and you can crisp them up on the skillet every time you’re ready to eat.
I had these with some burgers, pickled onions and a side of geens.
