Ube, Rose & Hawthorn Popsicles

INGREDIENTS:

  • 180g steamed ube sweet potato

  • 2 tbsp powdered hawthorn berries

  • 1 cup reserved ube steaming water

  • 1/3 cup full fat coconut milk

  • 1 date, pitted

  • 2 tbsp rose petals

  • 1/2 tsp ebony carrot powder (for color) @suncorefoods

TO MAKE:

Peel your sweet potato and chop it into pieces. Place it in a pot with enough water to full submerge the potatoes. Let this steam until it's fork tender, about 15-20 minutes.

Once steamed, reserve one cup of the steamed ube water. Then, add your steamed ube to a blender or food processor with the reserved water, coconut milk, hawthorn powder, pitted date, rose petals and ebony carrot powder, if using.

Blend it all up until smooth. Then, pour this mixture into popsicle molds and freeze for at least 12 hours or overnight.
