Ukrainian Katleti & Sweet Potato Mash
30 Minute Meals; ep 2
This is the second recipe in my 30 minute meals series. All of the meals here take about 30 minutes or so to make. The first recipe, I made Baked Sweet Potatoes with Bacon and Eggs. You can see the recipe on my Instagram, below.
Meal Prep:
For this to be a 30 minute meal, I did a little bit of meal prep by pre-roasting the Japanese sweet potatoes in advanced. This saved me about 45 minutes of time. Roasting vegetables is very easy and doesn’t take much effort. Alternatively, you could also steam the sweet potatoes the night before which would only take 20-30 minutes but either way, I recommend preparing them in advance to save prep time when you want to make your meal.
Ingredients:
Katleti
Makes 4 servings
1 lb chicken breast or ground chicken
1 small onion
1 clove garlic
1 egg
1/4 cup cassava flour (sub almond or tigernut flour)
1 tbsp fresh parsley (sub cilantro)
1 tbsp fresh dill
salt to taste
black pepper to taste
1/4 tsp cumin
2-3 tbsp avocado oil for cooking (sub olive or coconut oil)
Japanese Sweet Potato Mash
Makes 4 servings
3 large sized Japanese sweet potatoes, appox 600g (sub yellow or white yams)
1/4 cup chopped herbs (cilantro, parsley, dill and mint)
1 clove garlic or 1/2 tbsp garlic powder
2-3 tbsp coconut milk or cream (optional)
salt and pepper to taste
Preparations:
Night before or a couple days before:
Poke a few holes in the Japanese sweet potatoes and roast them in the oven at 400F for about 45 minutes or until you begin to see juice coming out of them. Store in the fridge until ready to use.
Katleti:
Add all the ingredients except for the oil into a food processor and blend until everything is well combined. Then, heat a skillet over medium. While it’s heating up form your katleti by using a cookie scoop and creating small patties with them. Depending on how big you make them, you’ll end up with anywhere between 4 and 6 patties.
Test the skillet to see if it’s hot enough by flicking a bit of water onto it. If it sizzles, the pan is ready to use. Gently, place the katleti onto the skillet and cook for about 5 minutes per side. Once one side is cooked, flip and cook on the other side. Then, add about 1/3 cup of water to the pan, cover it and let the insides cook.
Sweet Potato Mash:
While the katleti are cooking, make your mash. Chop up your herbs up finely. Use a garlic press or grater to mince the garlic.
Then, remove the skin from your sweet potatoes and mash them in a bowl. Once they are full mashed, add in the milk or cream (if using), herbs, garlic, salt and pepper and mix to combine.
By this time your katleti should be done and your meal ready. Serve it up and enjoy!
