Dairy & Grain Free Nachos

These paleo nachos are my favorite! They’re hearty, packed with nutrients the sauce is soo delicious!

Ingredients:

(Serves 2-3)

Ground Beef

  • 1 bag of grain free chips (I used siete)

  • 1 lb ground beef

  • Bacon grease, for cooking

  • 1 clove garlic, grated

  • 1/2 cup broccoli stems (or veggie of your choice)

  • 1 onion, finely diced

Nacho Sauce

  • 300g Japanese sweet potatoes

  • 1/2 cup full fat coconut milk

  • 65g coconut yogurt

  • 1/8th tsp garlic powder

  • Turmeric, a few big shakes

  • Pinch black pepper

  • Pinch salt

  • Nutritional yeast, to taste (optional)

Preparations:

  • Begin by peeling the sweet potatoes and steaming them in a pot of water until fork tender.

  • While this is happening, oil a skillet and heat it up. While it’s heating, finely dice an onion. Once the skillet is hot, add your onion to the pan.

  • Then finely chop up the broccoli stems or whatever veggies you’re using. Add them to the pot

  • Grate a clove of garlic and add it in too. Stir well and allow this all to soften for about five minutes or so.

  • Then, add in the ground beef and if needed more bacon grease. Remove from heat and set aside when the meat is fully cooked through

  • Remove the steamed sweet potatoes from the pan. Add them to a blender along with the coconut milk, coconut yogurt, garlic powder, tapioca starch, black pepper, salt and nutritional yeast, if using. I left out the nooch in mine.

  • Then plate it up. Spread some chips on a large plate. Add the ground beef on top followed by the sauce and dig in!
