Grain Free Single Serving Paleo Pancakes
I have officially entered my single serving era! Now that I live alone and can cook whenever and however much I please, I don’t always meal prep my breakfasts.
Sometimes I find that I simply don’t want to consume the same thing multiple days in a row. So, I don’t. I just make one serving.
These pancakes are allergen friendly and perfect for folks with gut health and autoimmune issues. They are paleo, grain free, dairy free and easy to make. You may make one large pancake, like I’ve done in these photos, or smaller dollar pancakes. I have done both and they are delicious.
If you’re feeding multiple people, simple double or triple this recipe.
Ingredients:
Pancake:
60g banana, mashed
1 egg
2 tbsp water or full fat coconut milk
16oz tahini
2 tbsp cassava flour
1 tbsp tapioca starch
1 serving bone broth powder or protein powder of choice
1 tbsp hawthorn powder (optional; for heart healing)
2 tbsp oil for cooking
Toppings:
1 egg
Deli meat
Fruit: diced bananas, strawberries, peaches, etc
Preparations:
Mash the banana in a bowl until it’s smooth. Then, crack an egg in and mix them together with a whisk or fork.
Add in the coconut milk and tahini and mix until smooth.
Then, add in the cassava flour, tapioca starch & bone broth or protein powder and mix until everything is well incorporated and combined.
Heat a skillet over medium and add 2 tbsp oil.
Once it heats up, add the batter and cook on each side for about 3 minutes. Flip and cook on the other side.
Remove from stove and serve immediately with your choice of toppings.
