Mangosteen Hibiscus Korean Style Mayak Eggs

I’ve become obsessed with making marinated eggs. Marinated eggs are a common banchan (side dish) in Korean cuisine.

They are called Mayak Eggs in Korean. Mayak translates to “drug” in Korean & they’re called this because they’re so addictive, like a drug. Korea is a very drug free country - so this turn of phrase is actually quite humorous to them.

Naturally, I gave this recipe my own spin and added in some healing herbs from Anima Mundi Herbals to it. I am using their Mangosteen Hibiscus Powder.

Mangosteen benefits for PMDD/PMS & The Gut:

Hibiscus benefits for PMDD/PMS & The Gut:

Hibiscus is one of my favorite herbs. My grandmother used to drink it daily. It is a natural prebiotic that can ease bloating and water retention and can act as a gentle relief for digestive irregularity.

It is rich in Vitamin C and anthocyanins, lowers blood pressure & helps to reduce cravings related to hormonal shifts.

Ingredients:

  • 6 hard or soft boiled eggs

  • 4 cups water, warm but not boiling (~140F)

  • 1/4 tsp sea salt

  • 1 heaping tsp Anima Mundi Herbals Mangosteen Hibiscus Powder: (use this link & code FOODBYRACHEL for 15% off your order)

  • 2 tsp apple cider vinegar or herbal infused apple cider vinegar

  • 1 tsp coconut aminos or soy sauce

  • Pinch or two of rose petals (optional)

Preparations:

  • Bring water to a boil in a pot. Let it cool to ~120-140F

  • Pour a bit of the water into a small jar and add the mangosteen hibiscus powder in. Use a fork to whisk it together until it’s mostly smooth.

  • Stir in the salt, vinegar and coconut aminos.

  • Place the eggs into a jar or container. Add the rose petals, if using, and pour the mangosteen hibiscus, salt, vinegar, coconut aminos water over the eggs and add more hot water, just until the eggs are fully covered.

  • Let the mixture fully cool and then seal and refrigerate overnight. At least 4 hours marinate time is best but 12+ hours or overnight is ideal.
