Paleo & Grain Free Cassava Biscuits

These have been in my rotation for a few years now and I like to eat them with almost every meal. They’re a great addition to breakfast, make a nice accompaniment to a soup or salad and are excellent when eaten with chili, a rice dish or any other savory meal.

These do contain eggs but are otherwise free of the top eight most common allergens, are gut health & AIP friendly and paleo.

Ingredients:

  • 2 eggs

  • 1/2 cup apple sauce or 1 peeled and grated apple

  • 1.5 cups cassava flour

  • 1/2 cup tapioca starch (sub arrowroot flour)

  • 2 tsp baking powder (I use Otto’s)(if you don’t have grain free baking powder use 1 tsp baking soda instead

  • 1/2 cup avocado or coconut oil

Preparations:

  • Preheat your oven to 350F

  • Crack two eggs in a large bowl.

  • Peel and grate an apple over the eggs. Pour in the oil and mix together well.

  • Add in the flours and mix until a dough begins to form.

  • Knead it on a smooth surface and divide it into four equal pieces.

  • Roll each piece into a ball like shape.

  • Bake for 25 -30 minutes.
