Paleo & Grain Free Cassava Biscuits
These have been in my rotation for a few years now and I like to eat them with almost every meal. They’re a great addition to breakfast, make a nice accompaniment to a soup or salad and are excellent when eaten with chili, a rice dish or any other savory meal.
These do contain eggs but are otherwise free of the top eight most common allergens, are gut health & AIP friendly and paleo.
Ingredients:
2 eggs
1/2 cup apple sauce or 1 peeled and grated apple
1.5 cups cassava flour
1/2 cup tapioca starch (sub arrowroot flour)
2 tsp baking powder (I use Otto’s)(if you don’t have grain free baking powder use 1 tsp baking soda instead
1/2 cup avocado or coconut oil
Preparations:
Preheat your oven to 350F
Crack two eggs in a large bowl.
Peel and grate an apple over the eggs. Pour in the oil and mix together well.
Add in the flours and mix until a dough begins to form.
Knead it on a smooth surface and divide it into four equal pieces.
Roll each piece into a ball like shape.
Bake for 25 -30 minutes.
